Things are starting to look up around here. Big E goes in for his re-check tomorrow. I had hoped he would be racing around the house at this point, but he is recovering more slowly than we'd hoped. I think he will need at least one more week off from work to be full strength. We will see what his x-ray shows tomorrow. Today I made desserts for tomorrow's birthday dinner. I made a lemon curd cheesecake, a caramel cake, and a ginger chocolate torte. Tomorrow I will need to put the caramel glaze on the cake, but the other desserts are chilling in the fridge, and since I used less than a pound of butter I feel virtuous in my dessert choices. (We won't think about the cream or sugar.) Earlier in the week, when I was so tired, I turned the nutritional portion of the menu over to my mom. I can't wait to see what she came up with!
